It's a lot more complex than the answer you would like, but using diatonic scales with chromatic passing notes is a good start. Throw in some diminished scales, altered (superlocrian/melodic minor), and whole tone scales, and you'll have most sounds covered.

sorry also the Bm7 is actually a Bminor/major7.usually a "minor/maj7th" uses the 1st,minor3rd,5th,maj7.hence a minor chord with a major 7th. in jazz the use of minor/major chords are facilitated by the Dom7.

the Bm7 for example is like this: 7th fret on the E, 6thfret on the A, 7th on the D &7th on the G. the notes played are: B,Eb/D#,A,D from B thats the 1st, Major 3rd, Dominant 7, minor 3rd.the E7 uses the same shape however its all down one string starting form the Enote at the 7th fret of the A string. E,Ab/G#,D,F#. from E thats the 1st, Major 3rd, Dominant 7, 2nd/9th.if the Dom7 wasn't there the Chord would be Eadd9, however the Dom7 results in the E9 sound. hope that helps
